  • 1/4 kilogram beef flank steak, fats trimmed and scored in diamond pattern
  • 1 corn, husks and silks removed
  • 4 cherry tomatoes, halved
  • 2 yellow sweet peppers, seeded and halved
  • 2 onions, trimmed
  • 2 cups mixed greens

Cilantro dressing

  • 1 teaspoon garlic, peeled and quartered
  • 3 tbsp lime juice
  • 2 tbsp snipped fresh cilantro
  • 2 tbsp sliced shallot
  • 1 tbsp water
  • 1 tbsp olive oil
  • 2 tsp honey
  • 1/2 teaspoon chilli powder
  • 1/4 teaspoon ground cumin
  • 1/4 tsp salt

Mix together garlic, lime juice, cilantro, shallot, olive oil oil, honey, chilli powder, cumin and salt in a blender or food processor. Pulse until mixture is well-combined and easy. Put half the dressing in a sealable container and chill in the fridge until ready to use. Pour the rest of the half at a sealable plastic bag and put steaks from the tote. Refrigerate for half an hour. Once ready, remove meat from bag and discard extra marinade. Brush corn, sweet onions and peppers with olive oil. Cook corn and meat over medium heat on the grill for 20 minutes until cooked through. Grill sweet peppers throughout the previous 8 minutes along with the onion throughout the previous 4.
